Q.E.D Pinot Noir
by Savaterre

Q.E.D is Latin "quod erat demonstrandum"

Which was to be proved

QED is the label for our close-planted Beechworth Pinot Noir from young vines (< 8 years old).

I am strongly convinced that the best Pinot Noir comes from unfiltered, close-planted vines of greater than 8 years of age.

Our first Savaterre Pinot Noir is due for release in Autumn 2004.

2000 Q.E.D Pinot .....Sold Out

Far from the mainstream. A powerful and brooding wine with powerful aroma, texture intensity and length. Made using typically Burgundian techniques. Wild yeast, open fermenters, pigiage, and natural malolactic.

Tasting Notes:

Brilliant. Intense Dark Crimson.

The bouquet has powerful earthy aromas of morello cherries, violets, roses, white truffles and some leather.

Mouth filling richness. Deep rich ripe plum and sour cherry. A silky textural wine. Spices such as cloves, cinnamon and nutmeg are the result of some judicious use of new French oak. The tannins are ripe and provide the structure this powerful wine requires.

Unfiltered.

Decant well in advance of enjoyment and never serve over 18 degrees C as this results in the purity of the aromas being reduced. The wine will develop in the glass.

2001 Q.E.D Pinot .....Sold Out

A little bit more velvet glove wrapped around the iron fist!

Tasting notes:

Brilliant. Deep Crimson

Lifted aromas of Sour cherries, violets, cured meat, briars and exotic perfumed spice.

More sophisticated and concentrated pure fruit still with a powerful structure. There is a rich, lifted, ethereal nose that just continues to open and reveal more and more layers of intrigue.

The first thing that you notice when drinking this wine is the opulent, mouth filling plum and dark cherry flavours. Then as you swirl it in your mouth complex flavours of summer berries, savoury spices such as cinnamon, cloves and allspice are released intermingling with more developed roast meat, truffle and earth characters. The palate has intense concentration while retaining true Pinot flavours and structure. An excellent balance of acidity and tannins ensures a wonderful finish that is both savoury and long.

Unfiltered.

Decant well in advance of enjoyment and never serve over 18 degrees C as this results in the purity of the aromas being reduced.

Bottled in November 2002 and was released in the cool of June 2003.

Our first Savaterre Pinot release is targeted for autumn 2004
